Founded in 1956, this farmer-owned co-op includes approximately 90 members, nearly all of whom are Amish. Their dairy farms are small, family run operations, with no more than 20 cows each. Hand-milking is the norm among the members, and the fresh milk is delivered to the cheese house in traditional milk cans.
As dairy farmers, the group has chosen to refrain from the use of growth hormones or steroids in the raising of their cows. And as cheese makers, they maintain the traditional techniques and handmade quality of their forefathers, crafting a wide variety of cheeses in a USDA-approved facility just outside Middlefield Ohio.
