"Quality over quantity," is the motto at KJ Greens, a mantra that reflects the dedication and enthusiasm of professional chefs and farmers Jeremy Lisy and Matt Voss. The duo oversees a five-acre operation in rural Trumbull County, complete with two greenhouses, where they raise and sell herbs, veggies, heirloom tomatoes, and more than 20 varieties of microgreens. Their dedication to quality is nearly obsessive, says Jeremy. "We hand-pick and wash everything to order -- we don't even have a holding room. That means that all our produce is on its way within hours of being harvested."
